Merry Christmas

Merry Christmas to you all and a Happy New Year!

I hope you all had a beautiful Christmas just like I did.

We truly had a Merry Christmas this year. Traditionally in Germany, we give our presents on the evening of the 24th. So the 24th is a Half Holiday, which means every store closes around Lunchtime so everyone can spend quality time with their Family.

Usually we eat a small Christmas Lunch at my Grandmas which is “Linsensuppe” a thick Lentil Soup with Bacon. After that its time to relax a bit and then it is “Santa Time”. My Dad dresses up as “Weihnachtsmann” the German Santa Claus. He puts on his big fluffy Boots, we make his Beard a little whiter with some White Hairspray that is usually used for Carnival and then some Rouge to make his cheeks extra red. Then he goes out to the Houses that asked him to come, with his Golden Book where all the names of the Naughty and Nice Kids are written in. So you better be good or you’re gonna go on the Naughty List. While he walks through the streets of our little Village he always has his Bell thats ringing so all the Kids know he is coming, and if he meets them on the street he always has some Candycanes to give to them. There are still a lot of little boys and girls that believe the Weihnachtsmann actually exists just because of my Dad and I love that. He always gets excited to do it every Year and plus for me, I can say I am truly Santas Daughter ^^.

So while He is doing that we already prepare for the Christmas Dinner and exchanging gifts.
For my Family that means we either meet at our Grandmas House or at our House. This time it was my Grandmas House again.

We didnt go with the big presents this year. We said we wouldn’t give present to each other only for our Grandma. So we got her a pretty Pink Laptop case for her New Laptop that she just got this year and at our last Family Reunion I took pictures of the old pictures my Aunt had, where all of my Grandmas Family was on. Took that into Lightroom, enhanced it, reworked it a little more in Photoshop and printed it out in a big frame. She really loved that one. I did add the names of all the People on the Picture so we would know in years to come.

In case you are wondering, my Grandma is in the bottom row, the little girl with the big bow and the short dress. And most of her 12 Siblings are in the picture too.

First I didnt have the Christmas Spirit at all this year, it didn’t feel like Christmas but this Night just made it really a great Christmas.
Oh and lets not forget the 25th and the 26th, the First and Second Christmas Holiday, where we ate sooo much I feel like only eating Salad for the next week.

I hope you all had a very enjoyable Christmas and a cheerful time with your Family.

Always Remember, it is not about the size of the presents or the value, it’s about the Joy that you give and the time you spend with you loved ones!

Hugs and Kisses and a Happy New Year

Cute little Cupcakes

Today I wanna bring to you my first Tutorial.
Everybody loves Cupcakes, and having simple yet cute ones is even better.

What you need:

Daisy Metal Cookie Cutter
Scalloped Cookie Cutter
I found this on the Wilton Site for about $0.69.

Satin Ice Fondant
I use Satin Ice Fondant. I usually buy the 20 pound bucket. You can order it online on several websites. For the US I recommend globalsugarart. For Germany I mostly use, they have an amazing customer service.

Gel Food Coloring
Americolor Food Coloring
Americolor gives you the most vibrant colors and is really easy to dose with it’s tiny squezze bottles. I used the Americolor ELECTRIC Gels assortment for those Cupcakes.

Cornstarch | Powdered Sugar or Shortening
This really is a personal preference. I work with all 3 of them. Powdered Sugar makes the Fondant even sweeter, Cornstarch makes the Fondant dry faster and Shortening seems to be the best of all options but personaly I just dont like the greasiness. In the end, they all do their job, which is to keep the Fondant from sticking to your worksurface.
To make it even easier use a:

Non Stick Matt
Roll'n'Cut Matt
I have a very nice Silicone-Non-Stick Mat that I found at a local store once and then I also have this Roll-N-Cut Mat from Wilton which is really nice since it gives you some guidelines especially when you roll out fondant to cover a cake.

Rolling Pin
I use my old fashioned wooden one and dust it with cornstarch for rolling the fondant. But really, use what you got as long as it has some weight to it and rolls well.

And of course you need some Cupcakes.
I whipped up some easy Blueberry Cupcakes with a Sweet Cream Cheese Frosting. Well some would call them Muffins but since we add a sweet decorated top I guess they will count as some real Cupcakes. You can find the Recipe at the end of the post.

This is how you do it:

1. Get your Worksurface ready.
I like to get all my tools ready and close by before I start.
If you use the Roll’n’Cut Mat it tends to roll itself back up, you can stop that by either taping it to the counter or you use wipe a little bit of shortening on each corner to stick it to the counter.

2. Sprinkle your Mat with cornstarch or powdered sugar.

3. Get your fondant ready. Take out as much fondant as you need, one color at a time and immediately cover the leftover fondant in an airtight container to stop it from drying out.

4. Decide which colors you wanna use. I used Americolor Electric Blue and Electric Pink. Knead your fondant in your hand until it’s starting to get pliable and drop about 2 to 3 drops of the gelcolors into your fondant. Kned it, be careful not to mess up your hands to much (you could really also use Gloves but I always forget until I am at it already since foodcoloring really stains a lot). Knead and move it into your hands until the color mixes in well. If you want it more vibrant add more drops, one or two at a time. If you want it lighter, just add a little bit white fondant and knead it in.

5. If you have your desired color, take your fondant, slap it on your prepared worksurface. Dust your rolling pin with Cornstarch or Powdered Sugar, whichever you used and roll it into a nice flat disk to about 1/4 inch in height.

6. Take the Cutter and cut out some nice scalloped shapes.

7. Frost your Cupcakes lightly with the Cream Cheese Spread. Take your cutout scalloped shapes and drop them on top of your Cupcakes right in the middle.

8. Decorate with some little Sugar Nonpareils / Sugardrops and enjoy.

There you go, you have some super simple and very cute Cupcakes. Great for a Babyshower or a Birthdayparty or just for someone Sweet to put a smile on their faces.

And last but not least that amazing Cupcake Recipe.

BlueBerry Cupcakes with Sweet Cream Cheese Spread

Ingredients for the Cupcakes
2 1/4 cups self-raising flour
1 Stick butter, chopped
3/4 cup firmly packed brown sugar
1 Cup fresh blueberries
1 Cup milk
2 eggs, lightly beaten

Ingredients for the Sweet Cream Cheese Spread
2 Packs of Cream Cheese
1 Cup Yoghurt
1 1/2 Cups Powdered Sugar

1. Preheat oven to 180°C/400°C. Grease a cupcake pan for a dozen cupcakes and inser liners.

2. Sift flour into a bowl. Using fingertips, rub butter into flour until mixture resembles fine breadcrumbs. Stir in sugar.

3. Make a well in centre of flour mixture. Add blueberries, milk and egg. Gently stir until just combined. Spoon mixture into prepared holes. Bake for 25 minutes or until a skewer inserted in centre of 1 muffin comes out clean.

4. Stand in pan for 5 minutes. Turn out onto a wire rack to cool completely.

The last Day of Summer and Pizza on the Grill

You know those days when the leaves turn all those pretty colors and it gets cold and chilly and you start to realize Fall is gonna come soon…

But then all of a sudden, there is this one Day where Summer is all back and you get out your shirt and shorts and just enjoy this one amazing warm day. Last Weekend we had one of those amazing Last Summer Days.

Grilled Pizza

So we decided to grill out one last time and we thought as a fitting finish to this pretty Day we make something we had never tried before, Grilled Pizza. We didnt know how it would turn out and we definitely had some trial and error with it, but in the End it was just absolutely delicious… in fact, so delicious that I just about forgot to take a picture of the finished thing, we just ate it all. So the only conclusion, you just have to try it yourself. I promise you, you won’t be dissappointed.

Since it was a Sunday (and all the stores are closed on Sundays in Germany) we had to use what we had in the fridge and pantry. So we ende up doing two different versions.

Number one is a very original Red Tomatoe Sauce – Salami Pizza

Grilled Pizza

Number two was a little different, we made a White Ranch Sauce with Turkey Lunchmeat
Grilled Pizza

Some more Eyecandy of those easy and simply amazing grilled Pizzas

Grilled Pizza

Grilled Pizza

1 package active dry yeast
1 teaspoon white sugar
1 cup warm water
2 1/2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt

Toppings of your Choice
for the White Pizza:
– Ranch Dressing
– Smoked Turkey Breast Lunch Meat
– Mushrooms (out of a Can)
– Buttercheese

for the Red Pizza:
– Tomatoe Sauce
– Italian Seasoning
– Salami
– Mushrooms
– Gouda

1. Start your fire. Since we use real charcoal we start about 45min to an hour before we want the Pizzas to go on. The coal has to be all white and no flames should be seen, that is when they are the right heat. I can’t give you any tips on using Gas since we never owned a gas grill.

2. Will the fire is getting started go inside and in a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.

3. Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.

4. Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan, pizza sheet or stone.

5. Spread with desired toppings and put the Pizza on the grill. Since we dont have a BBQ and only an open Grill we used some tinfoil that we sprayed with some cooking spray to help melt the cheese.

6. Grill until the crust is nice and golden brown and the cheese is all melty. Cooking Time really depends on your grill, so check on it every once in a while. It took about 45min for ours, but it was worth it.

7. Enjoy the Goodness.

Grilled Pizza Last but not least, my Dad aka Teddlinskers grilling the deliciousness, with some Bratwurst (German Sausage | which can never be missed) and some Buffalo Chicken Wings that have been brushed with Moores Buffalo Wing Sauce. Which is in my opinion definitely the best out there.

Emi’s Schuleinführung

ChrissyCupcake - Emi's First Day of School

About two Weeks ago my Little Cousin had her first day of school.
In Germany School usually starts with 1th Grade, when you are 6 years old. Before that you go to Kindergarten and play and have fun being a kid. In my Kindergarten we had a “Zuckertutenbaum” which is a tree with Cones that are filled with sweets, to make the going to school “sweeter” for the kids.
Zuckertuetenbaum from Google It looked something like this, just cuter and our Kindergardeners where awesome, they changed the Zuckertueten from small to bigger ones about 3 times, so we kids thought that they are really growing. Then on our very last day of Kindergarten, we all got to “harvest” them.

It was so much fun and this tradition still holds up to this day and when I have children, no matter if they grow up in the US or in Germany, I am gonna do this amazing tradition for them too.
Since Emi is the biggest of 4 siblings, her Mum asked me to bake a cake and of course I gladly accepted.
Emi is such a sweet and caring big sister. She loves everything pink, so I tried to incorporate that.

So here is how it all began.
I started with a delicious White Chocolate Mud Pie. Divided it in 4 batches and colored it in different shaded of pink. Then I divided each Color onto two pans, a smaller (20cm radius) and a bigger (28cm radius) one, and baked them until they where nice on the outside.

Don’t get fooled by the color, I took this pic with my Iphone and it looks rather dark but really isn’t.
There is a good trick to getting the cakes pretty level. Cool them in the pan for about 10min, then turn the cake upside down on a piece of parchment paper and let them cool upside down. It makes the Cakes oh so level and you hardly have to cut any of the tops off.

I put some little flags in with numbers, so I remember which of the colors is which.

Then I started assembling. I used this awesome upside down technique that I saw on the Internet the other day but unfortunately can’t find the link anymore. It is rather easy and so cool to get really smooth sides. You start on your turntable, put a piece of parchment paper on and then a big dab of your frosting. Smooth it out a little bigger than the size of your cake, then add your cake, smoothest side down. Continue stacking and icing until you have all your layers assembled. BUT DO NOT ice the very top of your cake, because youre gonna turn it upside down after it has been chilled in the fridge for a while. Its gonna look something like this.

I decided to assemble, chill and then frost the outside and chill again. When I was done with that, I took the cake out of the fridge, made a lot of space and turned it upside down. I was so scared it might fall apart but it really was nothing to worry about. I removed the parchment paper that was still on top and had this smooth, very even top. Just amazing. With a palette knife dipped in hot water I smoothed out the edge a little.

After that I repeated this whole procedure with the creamy Ganache.
This is how its gonna look when its all done.

Finally I covered it i Fondant and made some nice little decorations. I am a little upset about my Figurine because I just couldn’t get her right, but Emi still loved her.

Burgers a la Teddlinskers

As a kid you grow up and call your Dad, Dad or Daddy or in Germany Papa or Vater. Well in my family pretty much everyone has a nickname. So for me, my Dad was always just Teddl. Cause he reminds me of a big cuddly teddybear. With his beard and his big belly ^^. So there are a couple variations to his nickname, from teddl to teddy to teddlinskers, I love them all equally. Well I am a Daddy’s Girl after all and I couldn’t live without him, even though we fight just as much as we laugh with each other. No actually when I think about it, we laugh waaaay more than we fight.

So there is this almost kind of tradition of my Dad making Burgers on Sunday Night. Of course here in Germany we don’t usually eat them on a burger bun topped with condiments, no we eat them with Potatoes, Spaghetti or Rice, on a slice of bread, or just by themselves with a healty heaping of good “Bautzner” Mustard.
Now my Dad truly is the master of Burger making, no matter of on a grill or in the pan, he makes them in all kinds of different variations, but today really was something new.

He made awesome Cucumber, Pepper and Feta Burgers aka Burgers a la Teddlinskers.

Delicious Feta, Cucumber and Pepper Burgers.

The Ingredients are rather simple.

>> 2 lbs Ground Meat (we use pork)
>> Salt, Pepper,
>> Garlic Powder
>> 1 big Onion
>> 1 Red Bell Pepper
>> 1 European Garden Cucumber
>> 1/2 Block of Feta

Cut the Veggies and Feta in nice bitesize pieces.
Put the Ground Pork in a Bowl, add the veggies, mix it all up. Season to taste (at this stage it is really up to your liking, you can add some mustard or paprika, you can add an egg and some old soaked bread, there are so many options that all are gonna make it equally delicious).

Meat Veggie Mix

If you’re done with that, heat up a nice big skillet, preferable NonStick,
with about a tablespoon of Olive or Sunflower Oil.

Delicious formed burgers

Form your MeatMix in some nice round Burgers, throw in the skillet and fry until they are nice and evenly cooked with a brown crunchy outside.

Rice Krispie Treat

Chocolate Rice Krispie Treats

Today I needed something to comfort me. Sweet, delicious comfort.
I was craving something crunchy, something that makes me feel better and what else could
come to mind than Rice Krispie Treats. Rice Krispie Treat

I just got to know this yummy treat when I first came to the US four years ago and was instantly
hooked. I made it so many times since then and I always love to make it again.

RKT Tower ^^

It is easy and oh so delicious. I used Chocolate Rice Krispies instead of the regular ones
to give it a little bit of a grownup feel… Oh well not Grownup at all but I still love it.

RKT in the making

Here is the Recipes….

Rice Krispie Treat Recipe

Back up and almost running

It’s nearly 2 months ago since I had surgery again.
Despite the failures and terrible aftermath of that last 3 surgeries this 4th one actually went really well.

I was only 3 days on ICU and after about 14 days I could leave the Hospital and go home. During surgery the removed most of my stomach as well as my gallbladder, unstuck all my glued together organs and fixed the old ugly scar by cutting out most of it so that my skin can grow together completely new.

So far this worked fantastic.
Even the pain was duable this time.
There were complications again but everything went fine in the end so I don’t even want to think about those anymore.

The positive results are way overhand this time. I can finally take a deep breath again. This may sound normal to you, but the last two years I was not able to breath right. Walking up steps, I sounded like a huffin and puffin train. But now I can actually go up the steps without breathing so heavily.

I’m happy so happy about that.

I even cooked and baked again but I just didn’t have the time or passion to take decent pictures and write out the recipes. It was all about a little comfort for me.

Worst part so far is the adjusting and the pills I have to take now.
I have a stomach left that can fit between 100 to 150 grams. That’s not even a handful of food. If I only eat one spoon to much, everything is gonna come back out the way it got in…

But I have first results too. All together I lost about 25kg which is a little over 50 pounds an it’s slowly going down further. I sometimes don’t see it on the scale but I can feel it on all my clothes getting to big ^^ It’s a good feeling !!

Hugs to you all.

Hospital…. here I go again…

Today I write you from the hospital.
It’s 4:59am and I can’t sleep anymore, but ok I didn’t sleep half the night anyways.

In a couple Hours I’m having surgery. This time they want to try and fix my glued together organs and a gastric sleeve is gonna be made, for me to finally loose weight.

Currently I way in on 142,6kg on a height of 1.70cm. This is a BMI that falls in the category of morbidly orbese and I just don’t want to be like that anymore!

Right now I’m more anxious about the peridural anesthesia that I’m gonna get than anything else.

I hope everything goes well but I’m sure it will. I just have to stay positive!

Pretty in Pink

Oh Dear oh Dear,

I just love pink. Lately more then ever.
When I tried to kinda organize my 1TB external Harddrive I came across of lots of pictures I saved for
how I want my Kitchen and House to look someday. I thought I share some of those with you.

What would your favourite kitchen look like?

Ahh… I so want to finally have a House with a big Kitchen and a Husband and Kids….

Dreams Dreams Dreams. Hopefully coming true in the near future.

Still alive

Exams are keeping me pretty busy and writing applications for a new job doesn’t make it less stressful.

Anyways, I am still alive and breathing, not really living though. Luckily tomorrow are my Exams and after that I have time to finally catch up to myself and get back to doing enjoyable things.

In the mean time…. a nice picture from my trip to Chicago in 2010. Wish it was 2010 again and I could change a lot of things that happend since then. But since that ain’t possible yet, lets just look in the bright (at least I hope it will be) future,

XOXO Chrissy
