5 years… and a new one to come


Wow… it has been 5 years since I first posted on here. I can’t believe how fast time went by and how much has changed.

Started a new job 2 years ago, quiet that job just before christmas this year and already having the next one lined up. Moving around the country for this new job in a city I only applied at to be with someone I am not with anymore. But hey, new chances, new  year, new me !

I decided 2016 is going to become my year. So many changes are ahead of me. new places, new faces, new friends to be made some old ones to be lost. It’s going to be an exciting and scary year. 2015 it was nice with you, 2016 let’s get ready for the ride.



Goodness, I neglected this Blog for over a Year now. I found my “New Years” draft and we have July 2014 now. Crazy.
Live has not been the easiest but very rewarding lately. I started a New Job last October and have been working crazy hours lately but I also moved to Frankfurt and made so many amazing new friends. I finally feel like people actually care for me, which I don’t think I ever had this feeling.

This will be a very short post, but here have some Eyecandy that I made for a friend and Me.

I won’t make promises but I have so many unposted Recipes, I will try to upload them as quickly as possible.

Easy 15min Brownies from a Cakemix Box

Sometimes there is need for quick gooey delicious Brownies.

You go to your pantry, ready to pull out that one Box of Brownie Mix that’s always hidden in the back… but oh no, nothing is there and you are too lazy to mix it all together yourself!? Here is the perfect solution, Brownies from a CakeMix.

So here we go…

What you will need:

1 Box Moist Cake Mix
1 cup Cocoa Powder
1 cup lights Brown Sugar
2 eggs
1 cup Oil (maybe more if dough is two dry)


How to:

1. Preheat oven to 350degree

2. Mix all together in a Bowl. If the dough is to dry, add a little more oil. It will be a thick dough allmost cookie dough like with a slight oily texture when pressed a little.


3. Put in a oiled 3 x 9 inch Brownie Pan and spread with your fingers.


4. Bake for about 10 to 12 min or until you see a dry top. Let cool completely cut in small and enjoy.

Fudge times three

Wow… I am a really bad blogger, but well sometimes life takes over and there is just No time to even do anything fun.
Lately it is really rough. I have a hard time even getting to sleep. So many things in my head, on my mind, making my body once again fight me. This is no fun, when your body decides to take the stress into physical pain. Welcome back shoulder pain.

And now you might wonder, why all of this? Well because I borrowed my camera (I don’t even know how stupid I could be) to a “friend” and up to this date still don’t have it back. This was how long ago? January 12th. He told me he would get it back to me within the week… duh duh duh, still not in my arms again. And yes I would drive there and pick it up if it wouldn’t be a 3 Hour drive and he is supposedly in the Hospital. Well… after much talk and worry I got him on the phone again yesterday and he told me he will tell his Assistant to get in touch with me. Still waiting for her to call…. I need my Baby back. Argh… I feel like the dumbest person on earth, well I probably am for always trusting people and so far everytime I trusted someone I was badly hurt in the end. Please let this one end well. I even consider finding my way to God after all that has happend, I did loose it. But currently I feel this might be the only way to give me some peace….

On a happier note, I got excempt from all my School Exams and only have to take the one for the chamber of commerce now and then finally I will have my degree. Very happy about that.

So enough of my stupidity, on to a nicer topic…. Fudgy Fudge Fudge.
Melt in your Mouth Chocolatey Goodness.
My Mom wanted to make some at home ever since we went on our Trip through half of the Americas 3 years ago. Wow I can’t believe it’s been 3 years already.
Crazy Crazy. We had some absolutely amazing Fudge when we went up Nappa Valley in little Winery – town. It was beautiful, unfortunately I didn’t take a pic of this little
Town. Ha… after a little bit of googling I found the name of the store… and well the Town isn’t actually as small as I remembered. It was the Sonoma Cheese Factory.
And they didn’t only have phenomenal fudge there but also about every cheese imaginable. If you ever head up that way, go check out this place.

After a little internet search we found a lot of recipes, basically all containing the same main ingredients, melted chocolate and sweetend condensed milk plus some extra ingredients to vary the taste.

We quickly decided to make 3 Versions of this lovely treat.

1. Coffee Coconut Fudge

2. White Rainbow Fudge

3. Nutella Sea-Salt Fudge

Now don’t be scared this fudge is super super easy to make and done in about 10minutes. Melting the chocolate really is the most time consuming part besides the wait for it to get hard.

Coffee Coconut Fudge

24 ounces semisweet chocolate, chopped
1 can (15oz) sweetened condensed milk
1 1/2 tablespoons instant coffee (or espresso powder)
2 tablespoons vegetable oil
1/2 cup shredded Coconut


Spray an 8×8 pan with non-stick spray or lay out with parchment papers, cut the corners diagonally
so it will fit snug

Add semisweet chocolate to a double boiler, and melt completely. Once melted,let cool down for a
little bit so that the chocolate is still runny but not super hot anymore. Add in the sweetened condensed
milk, instant coffee and the Oil. Stir with a spatula until combined and fairly smooth, then spread evenly
in the bottom of the pan. Mixture will be thick.

Top with shredded coconut, then chill in the refrigerator for 60-90 minutes or in a very cold room over night.

Now with the toppings on this one, a little toasted coconut would be a nice addition as well.

White Rainbow Fudge

24 ounces white chocolate, chopped
1 can (15oz) sweetened condensed milk
1/2 cup fruit flavoured, multi coloured jelly confectionery
2cups candied fruit (cherry, orangeat, limes, whatever floats your boat) chopped
1cup dried cranberries
1 1/2 cups brittle or nuts

Spray an 8×8 pan with non-stick spray or lay out with parchment papers, cut the corners diagonally
so it will fit snug

Roughly chop the candied fruit and the jelly confectionery and place in a glass or stainless steel bowl.
Add the toasted pistachios and cranberries and mix gently. Add white chocolate to a double boiler, and melt
completely.Once melted, let cool down for a little bit so that the chocolate is still runny but not super hot
anymore. Add in the sweetened condensed milk and the chopped fruits. Stir with a spatula until combined
and fairly smooth, then spread evenly in the bottom of the pan. Mixture will be thick.

Top with some brittle then chill in the refrigerator for 60-90 minutes or in a very cold room over night.

1 cup Nutella
Sea Salt
1 – 2 Cups Walnuts

Spray an 8×8 pan with non-stick spray or lay out with parchment papers, cut the corners diagonally
so it will fit snug

Add semisweet chocolate to a double boiler, and melt completely. Once melted, let cool down for a little
bit so that the chocolate is still runny but not super hot anymore. Add in the sweetened condensed milk
and Nutella. Stir with a spatula until combined and fairly smooth, then spread evenly in the bottom of the pan.
Mixture will be thick.

Top with some brittle then chill in the refrigerator for 60-90 minutes or in a very cold room over night.

Super Hero Cake

Spring is coming and I hope it’s coming fast. I can’t stand this dull, very depressing Weather anymore.
To many bad things happend lately and I hope they are gonna turn into something better soon.

And since Spring is coming I though it’s time for some spring cleaning, but not the traditional – get the House sparkling – kind, I’m thinking more about the Digital kind.
I have so many many many pictures on my Harddrives on both my Laptops, Phone and my PC, it’s really time to get to action and clean up.

First I started with my pictures, oh man, so many bad pictures from the beginning of my Photography Journey, but then also soo many amazing ones, Memories.

While cleaning up I came across one of my first tired Cakes. It was a Super-Hero-Cake that I had made for my Brothers best Friend. The Fondant really doesnt look all that good and the Ganache was really not working well but in the End, I was proud of my work.


The Cake consisted of 2 Tiers with a Rice Krispie Treat Topper, shaped into a C (my Brothers Friend’s Name is Christopher). Both Tiers were a Coconut-Honey-Raspberry Cake with Blue Ganache and Fondant on the outside.

I cut each emblem for the Superheroes by Hand and painted them all with food coloring. I really like how they turned out. The Bottom Tier had a Skyline all the Way around, made with Black Fondant that I mixed with a little CMC to make it more stable. To make it look like spotlights I took some Candy-cane Hersheys Kisses (Regular chocolate ones would probably also work really well) and put them upside down so they would “light” the Superheroes ^^


Good Old Times. I like to remember and look at past work to see how much I have developed and learned in this short amount of time.

I never want to stop improving, cause there is still so much on this Earth to learn and experience. I hope you all will stay curious.

Birthday Weekend

Oh my oh my another year older… I loved how I woke up and my Mom comes to congratulate me and what does she say, “soon you’re gonna be 30”. I had to laugh so much, thanks Mom, I did only turn 24
plenty of time till the big Three Zero hits. First I want to have the first quarter yearhundred full ^^.
When I got up and walked into the Kitchen, I found a really nice set table with presents from my Family. I love how my Mom does this to every Birthday. My Dad and Brother where up to, too congratulate. This Birthday started of really nicely.


After that it was time for School. Friday was the last day of School until March and my Classmates requested some Birthday Cheesecake. Well of course I couldn’t resist to make one.
So here we go, Chocolate Crust – Cheesecake with homemade Caramel Sauce. They basically inhaled this thing. My one Classmate managed to eat all the pieces that the other ones didn’t want which ended in a total of 7 Pieces that he finished up. I loved it ^^


The afternoon continued with a big Birthday Celebration with my Family, Grandma, Aunts, Uncles and Friends. This was the Coffee Table with a Crustless New York Style Cheesecake that I made, a Cherry and Blackberry Streuselkuchen that my Grandma had made and some quick Red Velvet cake with a Joghurt-Creamcheese-Icing ( Front to Back).

For Dinner we made some Mountain Meatballs that are stuffed with Cheese and had been simmered on the stove for about 3 hours as well as some Onion-Pork which is baked in the Oven and is really tender and just delicious. The iPhone pictures really don’t show half off the goodness.



and here are just some other Impressions from my Birthday weekend. I really had to laugh about the Sticker on my Banana on Saturday. It still makes me chuckle.



On a beautiful Winter Walk.


So last night we finished off this beautiful Birthday Weekend with a visit to the Theater, and no I don’t mean the Movie Theater. We saw the Play “Purpurstaub” by Sean O’Casey. It was a Dramatic and funny Comedy. If it every comes around to be playing in your area, I can only recommend to go see it.

My Future, Worries and Apple Pie

It’s one of those days… the weather is grey grey grey and rainy. You look outside the window and think to yourself, what am I actually doing on this earth. The sun doesn’t seem to want to come out and the world gives you the feeling as if it just wants to go back to sleep.

Five Hours on Skype since the early wake with my most beloved person made it a little better but not being with him is ripping my heart apart a little more each and every day. Everytime I see his big smile it lights up my heart just as much as it hurts to not be able to kiss that silly face… and then there is this every burning question in the back of my head, what is the future gonna bring and future is rolling over me faster and faster.

The first set of Exams is gonna be in March, the second and final Set is gonna be in May. I don’t feel prepared at all. There is still so much time but I feel like the last 3 years where a waste of time. I could have studied in the US, but no I decided to go back to Germany and get my Education here.
How you always learn it from your parents, a good Education is Key. Only Question here is, where is my Education? Why was I the one having to teach my Boss, my supposed Mentor, how to use our Programms at Work. Why is the Chamber of Commerce who’s supposedly watching over us Students not helping when you call for help… So many Questions but I know I will never get an answer to that. Being the first Student with allmost straight A’s in my Company should have made me worry much earlier.

All I can do now is do my best, the best for myself, the best for my Future and then get away from here as fast as I can, but where too…

Should I stay or should I go…. The question is constantly on my mind and I know where my Heart wants to be, always wanted to be…

Enough worrying for a moment, I need to change my thoughts into something happier.
Apples. I remember those leftover Apples. Time to get out a cutting board and cutting away, bad spot here, core there, cut it out, throw it away, cut the good parts in cubes and put them in a bowl. Wow I realize I posted a lot of Apple stuff lately. I guess it’s Winter and thats kind of a Winter Fruit. Yeah that will do as an Explanation I guess.

Oh darn, to many bad spots on the apple and not enough for an apple pie filling. Time to see what else is in the Pantry. Glad I remember this can of Peaches.
Apple Peach Pie it is then. I cut those cute Peaches in cubes too. This is something to relax… but my mind wanders again while cutting, why do I always have this subject on my mind. I miss him so much. I miss the place where my Heart is at home. I have to think about how he always comes and hugs me and keeps me close. He doesn’t like when I am far away from him … I don’t like it either. I can feel his kisses and I wish … I wish….

Hmm enough cutting, adding some Sugar and plenty of Cinnamon plus 4 Tablespoons of Flour to the mixture. Mix mix mix away until the fruits are evenly coated with a layer of Sugar-Cinnamon-Flour-Goodness.

Pie Crust… how did that go again. Time to look it up, ahh easy but they use Shortening, I dont have that. Butter. I’m just gonna make my own Buttery Pie Crust. 3 Cups of Flour, 1 Cup Butter and 1 Cup of Water… argh my Butter is way to cold, time to use my fingers. It works wonders. When I got the butter worked in evenly I use about 5 tablespoons of ice cold water and work it into a pretty pliable dough.

Make two pieces out of the dough. Roll out one part thinly, put into a Pie Dish, add the Filling, roll out the second part and put on top. Cut away edges and squeeze the top and bottom dough with your fingers to seal the edges. Cut some nice little Steamvents in the top. Put in the oven at 450Degress for about 30 to 45min, or until the Crust is nice and Goldenbrown and your apples are tender and delicious.

It is soo hard to wait… Not only for the Apple Pie. Waiting really is not one of my strong characteristics… and we are back to the beginning topic… Where is all of this going…

I have to stop. I can’t. FINALLY… the apple pie is done. If you want it extra shiny, short before it’s done, take an egg, whip it and just brush it on top. It makes it look extra neat and delicious.
It’s hot and steamy and it smells like Cinnamon, this is just what I need right now.

It might not look to pretty… but after putting it on the table it was basically inhaled by my family… Hot, steamy, appely goodness. Sometimes there is no better comfort than this, even if its just for a little while.

Apple Peach Pie
About 4 Cups nice Tart Apples (cored and cut in cubes)
1 Can of Peach Halves (without the juice and cut in cubes)
1 Cup Sugar
3 Cups Flour + 4 Tbsp
1 Cup Butter
5 Tablespoons Ice Cold Water

How to

1. Mix the cut Apples and Peaches with the Sugar, Cinnamon and 4Tbsp of Flour. Set aside.
Preheat oven to 450 Degrees.
2. Mix the Butter with the Flour until it resembles the form of coarse Corn meal, add the water one tablespoon at a time, always adding the water to the dry parts, mix into a nice pliable Dough.
3. Split Dough in 2 pieces. Roll out one part thinly, put into a Pie Dish
4. Dump in the Filling

Chocolate Dipped Apples & Bananas | Spiced Apple Punch

First of all, even though it is 3 Days old already, I wish you a Happy Happy New Year. I hope you had a good time welcoming the New Year.
I had a really good time, even though I just stayed home by myself. I know this sounds strange but sometimes some alone time is just the thing you need. I made myself some yummy really unhealthy food, watched some TV and then watched the Fireworks at midnight that went off all around me. It was great.

So now to what the Headline is luring you in with…
In my Recap Post, I told you about the Chocolate Dipped Apples and the Spiced Apple Punch and I thought I share the recipes with you.

So we started off with about 60 Apples, that had to be washed and scrubbed a bit for the Dipped Apples and storebought Apple Juice (the Real one, not the Concentrate one).

For the ApplePunch we heated up the Applejuice with Oranges and Lemon and in a separate Pot made a Spice mixture with Cinnamon, Anise and such to give it some really Christmas-sy Flavours.

The Trick is, to cook the Spice mixture in a separate Pot, before adding it to the Apple juice that is spiked with the Oranges and Lemon.

Spiced Apple Punch – Recipe as PDF

Spiced Apple Punch

What you need:
1 Gallon Apple Juice (the 100% Fruit kind)
2 Oranges
1 Lemon


Cinnamon Stick
Vanilla Bean
Fennel Seeds
Star Anise

The Spices are really up to your own taste. Switch them, add or distract, until you like it.

How to do it

Preparation: Get a big Pot, big enough to hold about 1 1/2 Gallons. You can even use your Crockpot or Slowcooker and a small pot to cook the Spice Mixture in.

1. Get all your Spices ready.
2. Slice the Oranges and Lemon in nice midsize chunks.
3. In the small Pot add about 3 to 4 Cups of the Apple Juice.
4. Pour the remaining Apple Juice in the big Pot, add the Lemon and Orange slices and slowly heat up over middle high heat.
5. Add all the Spices to your own taste into the small pot and let simmer for about 10 to 15min. If you don’t particularly like one of the spices, just switch it out to your taste.
6. When it smells delicious enough, take a Strainer and add the Spice Mixture to the big Pot, sieving out the leftover spices.
7. Mix the whole thing and drink when it is nice and hot.

For extra Goodness, add some whipped cream on top and for the Grownups, add a Shot of Rum, Whiskey or Cachaca.

Now for the chocolate dipped apples. They are actually super super easy. Melted Chocolate, Apples and Sprinkles. Simple Deliciousness and you can actually have a lot of fun with them

Sorry for the bad picture, it’s nose got a little smudged when I tried to adjust him… Oh well, he still looks adorable ^^.

So my trick to making those is not melting the chocolate in the Microwave but actually doing it the old fashioned way in a double Boiler. I just use a Pot with a Metal Bowl on top that doesnt touch the water that is inside the pot. I find it much easier to melt the chocolate nicely without burning it. It may take longer but personally it just gives me the better results. In the picture below you can see my Pot with my Metal Bowl.

Chocolate Dipped Apples

Apples (Or any other fruit, like Bananas, Strawberries or Pears)
Chocolate (about 2 to 3oz per Apple | White | Milk | Dark )
Wooden Popsicle Sticks or wooden Dowels for Cakes
Sprinkles (I used Coconut Shred)

How to:
1. Wash the apples,scrab them, cut out any ugly parts and the bottom leaves and the stem of the apple. Dry them really well.
2. Stand the apples up and push the Popsickle Sticks all the way through the apple. There should be plenty of Stick still sticking out of the top to hold them nicely.
3. Melt your chocolate with your prefered Method.
4. Get a baking sheet out, line it with Parchment or Baking Paper.
5. Take your apples, dip them into the chocolate and swirl them around to make sure every side got enough chocolate, you can help with a Spoon. Tap the Apples with the sticks at the rim of the bowl to drip of the excess.
6. Put them on your baking sheet to dry. While they are still wet, add your Sprinkles or any other Decorations so they will stick to the Chocolate.

Enjoy this delicious treat.

To build the Snowman:
White Chocolate & Dark Chocolate
Coconut Shavings
Two Apples and 1/2 Apple
2 Wooden Dowels
Round Black Chocolate Drops or M&MS

1. Repeat Step 1 from above.
2. Take the two apples, cut of the bottom of the Bottom Apple to make it stand evenly. Sit the second apple on top, use your wooden Dowel and Push through both of the apples so they sit tightly, a little bit of the Dowel has to stick out of the Top of the two Apples. Push the Half apple on top to give it a Hole so you know where to stick it later.
3. Take the Half apple back off.
4. Melt your White Chocolate first.
5. Repeat Step 5 and Step 6 from above. Add the candies as Eyes, Nose and Buttoms for the Snowmans.
6. For the Hat of the Snowman, melt the Dark chocolate, dip the 1/2 Apple and put it on your baking sheet. With a Spoon add a puddle around Apple to make it look like a brim. Sprinkle Coconut Shavings on top, maybe add a little Fondant leave and let dry.
7. When the Hat is dried, put it on your Snowman and glue with a tiny amount of melted Chocolate.

Those are fun to make with Kids.

Sometimes there is just no time to post certain things and I though to myself, why not make a little Recap just for myself… well and you, of all the things that I didn’t get around to posting all year.

It didn’t happen that long ago but it is one of the more memorable ones.
Sunday December 16, is when it all happend. The 3th Annual Unterwirbach Christmas Market.
We got really short notice about two Days before it happend and we had to come up with something fast.
The year prior we made Waffles and Hot Milk but there wasn’t enough people coming so that one was just not cutting it again this year.

Since I had just been on the “Erfurter Weihnachtsmarkt” for our Company Christmas Party I had seen (and of course sampled) some of those delicious Chocolate Apples.

I though this would be perfect for the Christmas Market in our little Village, so my Mom and I decided to make Candy Apples, Chocolate Apples and a couple Chocolate Bananas.

We just needed to decide on what drink we wanted to offer…since German Gluehwein (Mulled Wine) is just such a traditional Thing and we knew my Uncle (The Organizer) would do it already, we decided to go for something a little more Fun and Special.
We made some Applepunch and Applepunch with “Schuss” (with a Shot). With “Schuss” means the grownups could decide if they wanted Rum, Cachaça or Whiskey in their Punch. ( and just FYI, in Germany we are actually allowed to drink Alcohol openly).

The Market went from 2 to 5pm. At around 4.30pm we had sold 52 of the dipped Apples, all of the dipped Bananas and about 40Liters of the ApplePunch. A lot of them with Alcohol. People came back for seconds which just made me smile so much. It’s this warm feeling inside that let’s you know, you are doing a good job. In the end we had used up 2 Bottles of Rum, 2 Bottles of Cachaça and 1 Bottle of Whiskey and if we would have had more I am sure we would have sold a lot more.

Now we are already thinking about what to do next year. It is just a lot of fun helping a good cause, especially since our little Christmas Market first has to establish itself. But really every year a couple more people are coming and it is just good too see our Community helping each other out and being there for each other. In this fast paced time this is truly a thing that should be cherished.

So if you have local Christmas Markets or Farmers Markets, go there and help your local businesses and do some charitable Work when you have the opportunity too.


Mini Key Lime Pie and New Years Eve

Can you believe it, 2012 is already over.
New Years is coming closer and closer and it feels like the year had barely started.
Time just flew by and so much happend this year.

A lot of good and a lot of bad happend but really, the good took over, which is really a calming thought.
I really enjoyed my Month long vaccation in the US. It brought me close to someone I would have never thought. I just feel happy thinking about this time and I am glad that I could enjoy the year after it had started in so much pain.

So what is the best to end the year with!? Of course a delicious little treat on New Years Eve or to make it even better, enjoy it after a long night Partying on New Years Day.

To get this nice tall shape I used a Muffin Tin I found at IKEA, it is called Dromar. It has very straight and pretty high sides, not becoming bigger on the top like the regular Muffin Tins.

But a regular old Tin will do just fine.

Put some Cupcake Liners in and fill about half an inch with the Graham Cracker Crust, bake, fill all the way to the top with the Filling and bake a little while more. The Liners will make it easy to get them out of the pan. Let them cool completely and chill them best overnight in the fridge. When they are all chilled, unwrap them to show of your stunning little pieces. Now you can see the nice little ridges on the side, plus it is much easier to eat two or three at once when you dont have to unwrap every single one ^^ much faster to sneak one in like that hihi.

Graham Cracker Crust

1 1/4 cup (125g) graham cracker crumbs (can use crushed butter bisquits)

2 tablespoons (30g) granulated white sugar

5 – 6 tablespoons (80g) unsalted butter, melted


4 large egg yolks, room temperature

1 cup (390 grams) sweetened condensed milk

1 cup heavy whipping cream

3/4 cup (120 ml) key lime juice (can use regular limes)

2 teaspoons grated lime zest (outer skin)


Preheat the oven to 350F (180C) and place the oven rack in the center of the oven.

Take a Muffin Pan butter or lightly spray with a non stick vegetable spray, and put in some Muffin Liners,

Mix together the graham cracker crumbs, sugar, and melted butter. Press a little bit of the mixture into each liner. Bake for about 5 to 8minutes or until set and lightly browned. Remove from oven and place on wire rack to cool while you make the filling


In the bowl of your electric mixer, with the whisk attachment, beat the egg yolks until pale and fluffy (2-3 minutes). Gradually add the condensed milk and and cream and beat until light and fluffy (3-5 minutes). Scrape down the sides of the bowl and then beat in the lime juice and zest.

Pour the filling over the crust and bake for about 10 – 15 minutes, or until the filling is set. Remove from oven and place on a wire rack to cool. Once it has completely cooled, cover and refrigerate for several hours or overnight.

Remove the Wrapper and serve chilled.
